Michaelhad found a hunk of meat on sale and brought it home for me to cook up. Well, this was one of THREE recipes I chose…yes, it was that big. (Check out the Crock Pot Easy Pork Roast and Crock Pot Pulled Pork Roast recipes that used up the rest of my hunk o’ pork.)

Since I had to make it up before it went bad, I didn’t exactly make this up at a normal time of day. My three recipes were set to be done around 4:00 a.m. Yes, you read that correctly, 4:00 in the morning, but I am usually up at that time anyway, so it was no biggie for me. It was a biggiefor Michael though. He kept going by the crock pot with this particular roast and smelling it asking me again and again if it would be ready before he went to bed. He said that I was torturing him with the wonderful smells coming from the crock pot since he couldn’t eat it that night. Poor guy…don’t you feel sorry for him. 😉

Crock Pot Garlic Pork Roast

The recipe for this Crock Pot Garlic Pork Roast made me smile when I saw the last steps. You see, Michael’s Great-Aunt T taught me how to make a rouxout of anything on our first visit to Louisiana. She is a wonderful lady that I love and adore. She is also who Iyla is named after. (Long story on how the nickname T came about.) So this one’s for you Aunt T. I am positive you would approve. I’ll even make it for you on your next visit!

I tried to slice this roast up nice and pretty…I really did! Oh how I wanted it to look as beautiful as the picture in the cookbook. However, try as I may, I couldn’t do it. Maybe I wasn’t using the right knife…I don’t know. I just know that it fell apart. So I gave up and tried it. I didn’t care anymore that it wasn’t in pretty slices. This Crock Pot Garlic Roast was GOOD!

Michael did get to eat it for lunch the next day. I was washing dishes with my back to him when I hear, “Oh my goodness!” I immediately thought something was wrong with Ryder or Iyla. Nope. He was just very excited about how delicious this Crock Pot Garlic Pork Roast tasted!

Crock Pot Garlic Pork Roast- Such a quick, easy and flavorful family dinner idea!

Ingredients for Garlic Pork Roast {Crock Pot}

  • 3-4 lb pork roast
  • 4 garlic cloves, cut into fourths
  • 1 t dried thyme
  • ½ t ground sage
  • ½ t ground cloves
  • 1 t salt
  • 1 t lemon zest
  • 2 T cold water
  • 2 T cornstarch

How to make Garlic Pork Roast in a Crock Pot

  1. Take a knife and cut 16 slits in your roast
  2. Place your garlic slivers in the slits
  3. Mix together your seasonings and lemon zest and rub all over your roast
  4. Put your roast in your crock pot
  5. Cover and cook on low for 7-9 hours or high for 4-5 hours
  6. Let your roast stand for 10 minutes before you slice it (or try to slice it)
  7. Take out your garlic slivers and discard
  8. Pour the juices through a colander into a saucepan
  9. Place the saucepan on your stove over medium heat and bring it to a boil
  10. Combine your water and cornstarch until the cornstarch is dissolved
  11. Pour slowly into your saucepan, stirring continually for about 5 minutes until it thickens
  12. Serve gravy over your roast

Notes for Crock Pot Garlic Herb Pork Roast

  • I made up this delicious Crock Pot Garlic Herb Pork Roast in myWest Bend 6-Quart Round Slow Cooker. It worked out perfectly. It was big enough that I didn’t have to cram my roast in and the round shape also worked well. Your favorite 6 quart crock pot would work too.
