Luckily, it's easy to swap out both these carb-heavy ingredients without compromising the classic tasteandtextureof falafel.

  • 2 cloves of garlic
  • ¼ cup of cilantro
  • ½ cup of fresh parsley
  • 8 ounces of cauliflower
  • ½ cup of almond flour
  • 1 large egg
  • 1 teaspoon of xanthan gum
  • ½ teaspoon of ground turmeric
  • 1 tablespoon of ground cumin
  • 2 teaspoons of salt

PICKING THE BEST FLOUR FOR KETO FALAFEL

So, the best keto flour for this recipe, hands-down, is almond flour.

If you have an almond allergy or don't want to use it,DO NOTuse coconut flour as a substitute. Coconut flour isextremely absorbent, and your falafel will end up incredibly dry and crumbly as a result.

Instead,you can replace the almond flour with an equal amount of walnut flour or sunflower seed flour.Both are low carb flours that will work just as well in this recipe.

HOW TO MAKE KETO FALAFEL

As I mentioned, this keto falafel recipe isincredibly easy to put together. It's actually an easy 3-step process that involves, mixing, shaping, and baking - that's it!

All you have to do is give the ingredients a few pulses in the food processor, roll them into falafel balls, and then bake them to perfection.

Now let's get into making the recipe so you can bite into these addictive falafelsASAP!

STEP 1: MIXING THE INGREDIENTS

The first thing you'll want to do is preheat your oven to400°F (200°C)and line a baking sheet with parchment paper.

Next,chop your cauliflower into floretsand blend them in your food processor until you get achunkytexture. Try not to overprocess your cauliflower since we'll be running it through again in a minute.Scrape the cauliflower chunks out of the food processor and put them in a bowl.

Thenaddyouronion,garlic,parsley, andcilantrointo the empty food processor, and blend all of these ingredients untilfinely chopped.

Finally,addthecauliflower chunks back in with the rest of the ingredients - the almond flour, egg, cumin, xanthan gum, turmeric, cumin, and salt - and blend until everything is just combined.

KETO FALAFEL IN THE AIR FRYER

You can also make this falafel in the air fryer. To cook them this way you'll want topreheat your air fryer to 375°F (190°C).

Then, after you form all of your falafel balls, lightly grease your air fryer basket with baking spray and place the falafel in a single layer on the tray.

Give the falafel a light spritz with the baking spray and cook for 15- 20 minutes until golden and crispy. Make sure you flip your falafel halfway through cooking.

HOW TO STORE & REHEAT YOUR FALAFEL

Ingredients

1 onion, chopped

¼ cup (15g) of cilantro

½ cup (30g) of fresh parsley

8 ounces (230g) of cauliflower

½ cup (60g) of almond flour

1 large egg

1 teaspoon of xanthan gum

½ teaspoon of ground turmeric

1 tablespoon of ground cumin

2 teaspoons of salt

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Break the cauliflower into florets, place them into the food processor and blend until chunky. Scrape out the cauliflower and set it aside.
  3. Add onion, garlic, parsley, and cilantro into the food processor and blend until finely chopped.
  4. Add the cauliflower back in, along with the other ingredients (the almond flour, egg, cumin, xanthan gum, turmeric, cumin, and salt). Blend everything just until combined.
  5. Gently form the mixture into balls around 2 tablespoons in size.
  6. Place evenly on baking sheet and bake for 35 minutes.
  7. To air fry, spray the air fryer basket with cooking spray and place falafel in a single layer in the basket. Lightly spray falafel and cook for 15-20 minutes until golden and crispy, flipping halfway through.
