Perfect for sprinkling on top of some Greek yogurt or a chia pudding for a tasty snack or breakfast. This recipe is grain free, gluten free and low carb, so a great healthy option. What you will need to make this recipe

You can use any nuts and seeds you have on hand. Macadamia, Brazil, pecan and walnuts are the nuts lowest in carbs and are great for keeping the total carbs per serve as low as possible. Other nuts that will also work well are hazelnuts and almonds.

Seeds that work well with this granola recipe are chia, flax, hemp, pumpkin, sesame and sunflower seeds. We like to include hemp seeds as we like the texture and they add some extra protein.

  • Coconut – We prefer to use shredded or flaked coconut in this recipe, as it is the bulk of the granola replacing the traditional oats or other grains.
  • Almonds – It is best to use raw, unsalted almonds for this recipe. Blanched, slivered or flaked almonds would also work.
  • Macadamias – It is best to use raw, unsalted macadamia nuts.
  • Pecans – It is best to use raw, unsalted pecan nuts.
  • Sesame seeds – It is best to use raw seeds that are not salted or toasted.
  • Pumpkin seeds – It is best to use raw seeds that are not salted or toasted.
  • Chia or hemp seeds – It is best to use raw seeds that are not salted or toasted.
  • Butter – Any butter will work in this recipe. For a dairy-free alternative you can use coconut oil instead.
  • Sweetener – We like to use Sukrin Gold in this recipe, it is a brown sugar alternative. You can use any one-for-one sugar replacement you prefer.
  • Cinnamon – We used ground cinnamon in this recipe. You can use more or less cinnamon to your preference.
  • Vanilla extract – Any vanilla extract or paste will work in this recipe. You can leave it out if you would prefer.
  • Salt – We use fine Himalayan pink salt, you can use any salt you prefer. It helps to bring out the flavor and sweetness of the nuts.

You may need –

You will need a large, flat baking sheet so you can spread out the granola to bake it evenly in the oven. It would be helpful if the baking sheet had a small lip also.

Step by step instructions

  1. Chop the nuts roughly and place all the nuts, seeds and coconut in a large bowl. Toss to combine.
  2. In a small jug or bowl, combine the melted butter, sweetener, cinnamon, vanilla and salt. Mix well.
  3. Add the butter mixture to the nuts and seeds. Stir well to ensure all the coconut and nuts are coated in the butter mixture.
  4. Spread the granola out on a lined baking sheet in an even layer and bake in the oven until golden brown. You will need to stir the granola 2-3 times during baking to ensure the coconut doesn’t brown.
  5. Once it is golden brown, remove the baking sheet from the oven and place on a cooling rack to cool down.
  6. Once the granola is cooled completely, store in an airtight jar or container.

  • Storage – Once the granola has completely cooled, it is best stored in an airtight container or jar.
  • Granola texture – If you wanted a finer chop on the nuts you can chop in a food processor, just be careful not to make it too fine. I prefer the texture when the nuts are roughly hand chopped.

Ingredients

Dry Ingredients

  • 2 cups coconut, shredded or flaked (100g)
  • ½ cup pecans, roughly chopped (50g)
  • cup macadamias, roughly chopped (50g)
  • cup almonds, roughly chopped (50g)
  • ¼ cup pumpkin seeds (40g)
  • 2 tbsp sesame seeds (15g)
  • 2 tbsp hemp or chia seeds (20g)

Wet Ingredients

  • ¼ cup butter, melted and cooled (60g or 2oz)
  • 3 tbsp preferred sweetener
  • 1 tbsp cinnamon, ground
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  • Preheat oven to 350F/180C. Line a large baking tray or cookie sheet with non-stick baking paper.

  • Combine all the coconut, nuts and seeds in a large bowl.

  • In a small jug or bowl, mix together all the wet ingredients and spices until combined.

  • Mix the wet mixture through the nuts and seeds until the dry ingredient mixture is completely coated with the butter mixture.

  • Spread the mixture out evenly on a baking tray.

  • Bake for 10 minutes or until golden, stirring 2-3 times during the baking process. You need to keep a close eye on the granola to make sure the coconut doesn't burn.

  • Remove the tray from the oven and place on a cooling rack. Allow to cool completely before storing in an airtight container or jar.
